Ingredients : Panipuri (Packaged/ready made), Potato, Tamarind, Coriander Leaves, Peanut, Yellow Pea, Coriander, Cumin, Fennel, Ajwain (Carom Seed), Dry Red Chili, Pani, Chat Masala, Green Chili, Salt, Black Salt.

Recipe at a Glance : Boil potato, green chili, yellow pea ⇒ roast coriander, cumin, fennel, ajwain, dry red chili, and make a powder ⇒ knead boiled potato, boiled green chili, black salt, salt, roasted powder, chopped coriander leaves, roasted peanut and chat masala ⇒ potato fillings is ready. Knead tamarind in pani and remove seeds ⇒ add black salt, salt, roasted powder, boiled green chili, chopped coriander leaves, chat masala ⇒ now pani is ready.

Push your thumb finger into Panipuri and make a hole ⇒ pour potato fillings into hole ⇒ dip filled panipuri into the pani and place into your mouth.

    I haven’t travelled to India since 1985, when I solo-backpacked around the world for 12 months and spent one month in India, mainly in Rajasthan. I would love to return and one day I’ll digitise my travel journals.

    1. Yes, to be honest, Panipuri or Golgappa or Fuchka what may you call it is the national food of India unofficially! Ha ha ha…

        Interesting it has so many names. I think I need to visit a global food market for a few of it’s ingredients. Pizza may have morphed into the unofficial food here, I load mine with veggies to feel better about eating it.
