Location : Tamil Nadu.

Ingredients : Kathirikkai, Fenugreek Seed, Coriander Leaves, Mustard Seed, Cardamom, Cumin, Onion, Ginger, Garlic, Tomato, Red Chili Powder, Coriander Powder, Salt, Jaggery, Garam Masala, Tamarind, Water, Sesame Oil.

Recipe at a Glance : Get oil hot in a pressure pan ⇒ add fenugreek seed, mustard seed, cardamom, cumin ⇒ add chopped onion ⇒ fry ⇒ add ginger, garlic paste and chopped tomato ⇒ cook ⇒ add red chili powder, coriander powder ⇒ turn ⇒ add salt, jaggery, garam masala and tamarind paste ⇒ turn and add chopped kathirikkai ⇒ turn and cook for one minute ⇒ add little bit of water ⇒ give a whistle ⇒ shift it to a pan ⇒ cook till become thicker ⇒ add chopped coriander leaves.

      5. Garam masala is a mixed powder spice of 3 to 5 ingredients. Basically Sweet and Hot.

        Does it matter the source used to add the sweet flavor or the source that provides the heat?

      7. Honey, Stevia, Xylitol and any other syrup does not meet the flavor and colour as sugar does. But consumption of much sugar is not healthy today.
