Location: West Bengal.
Ingredients: Cumin, Ginger, Red Chilli, Ool (Elephant Foot Yam), Water, Salt, Mustard Oil, Dry Red Chilli, Bay Leaves, Sugar, Garam Masala, Ghee.
Recipe at a Glance:
Step 1: Make a paste of cumin, ginger and red chilli.
Step 2: Peel off and chop ool.
Step 3: Boil ool with salt and water, drain the stock.
Step 4: Fry boiled ool in mustard oil and keep aside.
Step 5: Fry dry red chilli, bay leaves, cumin, paste, turn and fry.
Step 6: Add turmeric powder and salt, turn and fry.
Step 7: Add sugar, turn and fry.
Step 8: Add water, turn and cook.
Step 9: Add fried ool, turn and cook.
Step 10: Add water, turn and cook.
